Carrot-Apple Muffin - from Champion Juicer booklet

1 c. whole wheat flour
1 c. all purpose flour
2 tsp baking soda
1-1/2 tsp cinnamon
1/2 c. raisins
1/2 c. chopped walnuts
1 egg
3/4 c. firmly packed brown sugar
1 c. buttermilk
1/4 c. corn, safflower or light olive oil
1 tsp vanilla extract
1 c. grated apple
2 c. grated carrots

        Spray muffin pan with non-stick cooking spray.

        Combine flour, baking soda, cinnamon, raisins and walnuts; mix well.

        Whisk together egg, brown sugar, buttermilk, vanilla, oil, apple and
carrots. Add flour mixture and gently fold together.
Fill muffin cups 3/4 full.

        Bake at dg375 20-25 min. or until tests clean - makes 18 muffins, serve 
warm.
