Hearty Minestrone 2 T. olive oil 1/2 small head green cabbage, thinly sliced 2 medium carrots, coarsely chopped 1 medium onion, chopped 1 clove garlic, minced 2 cans whole tomatoes, crushed (16 oz. each) 5 cups water 1/4 cup chopped fresh basil OR 1 t. dried basil, crushed 2 t. slat 1/2 t. oregano, crushed 1/4 t. pepper 3/4 cup ditalini pasta or other small tube shaped pasta 2 T. grated Parmesan cheese 2 T. pine nuts In large pan, heat oil over medium high heat;add cabbage, carrots, onion
and garlic. Cook stirring until lightly browned. Add tomatoes with
liquid, water, basil, salt, oregano and pepper. Cook over high heat
until soup comes to a boil. Reduce heat to low. Cover and simmer 30
minutes or until vegetables are tender. Add ditalini. Return t a boil.
Reduce heat cover and simmer 10 minutes until pasta is tender. Sprinkle
with cheese and pine nuts. Makes about 8 cups at 180 calories per
