Caramel and Coconut Crepes Try these crepes. They are so good! Rating: Serves: 3
Prep. time: 5 minutes
Cooking time:  10 minutes
3 Mission® flour tortillas1 2/3 cups caramel, (or Mexican Cajeta)4
tbsp. rum1 1/2 cups coffee ice cream1 1/3 cups shredded, toasted coconut

In a frying pan, melt the caramel or Mexican cajeta, and add the rum.
Leave to boil for 5 minutes, stirring once or twice with a wooden spoon
and using great care. Dip the tortillas (one at a time and very
carefully) to cover in the caramel. Using tongs or a fork, place 2
tortillas, folded into 4 parts on each plate, and add a scoop of coffee
ice cream. Sprinkle with shredded coconut. __._,_.___
