FRITTER BATTER #1

For dipped Fritters
1 c. flour
1 1/2 tsp. baking powder
1/4 tsp. salt
1 egg, beaten
2/3 c. milk
Sift together dry ingredients; add the beaten egg and milk; beat well
again. Use for dipping large pieces of fruit, vegetables, oysters, etc.
Fry until brown in deep hot fat at 385°F.

For Dropped Fritters
2 c. flour
3 tsp. baking powder
1/2 tsp. salt
1 egg, beaten
2/3 c. milk
Sift together dry ingredients; add the beaten egg and milk; beat well
again/ use for small berries, chopped fruits, vegetables, meat, fish,
etc. Drop by spoonfuls into deep hot fat at 375°F. and fry until
brown.
