BROWN SUGAR GLAZED PORK ROAST

 

Ingrediants:

3-4 lb.              Pork loin or rib loin

½ c.                 Brown sugar

1 t.                   Rosemary

2-3 T.              Olive oil

8                      Garlic cloves

MUSHROOM RAGOUT SAUCE:

2                      Onions, julienned

4                      Garlic cloves, minced

1 t.                   Lemon zest

½ lb.                Mushrooms assorted

1 T.                  Worcestershire

¼ c.                 White wine

½ t.                  Rosemary

2 T.                  Butter

¼ c.                 Parmesan

2 T.                  Bleu cheese, crumbled

 

Directions:

Mix sugar, herbs in bowl; rub loin with oil & garlic.

 then press sugar mixture into meat.

let marinate overnight.

before cooking, press excess sugar into meat.

bake @ 300° to 140°.

Let rest before slicing.

RAGOUT:

Saute onions till starting to caramelize.

add garlic, zest cook 2 min.

Add mushrooms cook till liquid evaporates.

add Worcestershire, wine; rosemary and cook till wine evaporates.

add butter till incorporated.

Pour ragout over slices and serve.
