Bananas Foster French Toast

 

Bananas Foster Syrup:

1 1/2 cups good quality maple syrup

2 tbls. butter

4 bananas, peeled, halved and sliced lengthwise

1 tsp. rum flavoring (extract) or 1 tbl. dark rum

 

Directions:

1. In a small saucepan, heat syrup over medium heat, add butter and stir until 
butter melts and syrup is bubbling.

 

2. Add bananas and heat thoroughly.

 

3.

Remove from heat and add rum or rum extract.

Return to heat and keep warm.

 

French Toast:

6 large eggs

2 tsps. vanilla

1/2 cup whipping cream

6 tbls. butter

8 slices French bread, preferably a few days old

 

Directions:

  1.. Make batter by first whisking eggs.
  2.. Add vanilla.
  3.. Pour in whipping cream and whisk until well blended.
  4.. Melt 1 to 2 tablespoons of butter over medium-high heat.
5. Dip slices of bread into batter and soak thoroughly.

6. Place 2 slices at a time in melted butter and cook each side

until golden brown. Repeat with remaining butter in skillet and

slices of soaked bread.

7. Serve slices with warm syrup and bananas.

 

Serves 4.
