BAKED CHICKEN WITH BUTTERED CORN
1 (3 lb.) chicken, fryer, cut up
1/2 c. flour
1 tsp. salt
1/2 tsp. pepper
1/4 lb. butter, or butter
3 c. corn kernels, fresh or frozen
1/2 tsp. salt
1/4 tsp. pepper
1/4 tsp. nutmeg


Shake chicken pieces in a bag with flour that is seasoned with salt and pepper. Saute gently in 2 tbsp. butter for about 5 minutes per side until just golden. Place the chicken in a casserole and melt the remaining butter in a saucepan, then pour 1/2 of melted butter over the chicken.Cut corn from the cob (or thaw frozen corn in hot water and drain); put the kernels in a bowl. Pour the remaining butter over the corn and toss with salt, pepper, and nutmeg. Pour the corn over the chicken and cover the casserole. Bake at 350 degrees for 40 minutes or until chicken is done. Serves 4.
