Date Walnut Bread
Recipe from: Helen Roeder, Bethlehem, PA.
2 cups flour
1 tsp. baking powder
2 cups pitted, chopped dates
1 cup chopped walnuts
1/2 cup vegetable shortening
1 cup boiling water and 5 TB cold water
3/4 cup packed brown sugar
1 egg
1 tsp. baking soda
1 tsp. vanilla extract
Preheat oven to 350º F. Grease and flour a 9" loaf pan.
Sift together flour and baking powder; set aside.
In a large bowl, put the chopped dates, walnuts and shortening; pour
boiling water over them.
Mix until shortening dissolves into small pieces, then add the cold
water, brown sugar, egg,
baking soda and vanilla; mix into the flour. Beat until all is mixed
well.
Pat batter into prepared pan and bake for 60 minutes.
Makes 1 loaf.
