Deep Dish Ham Pie

1/4 c. butter or margarine
1/4 c. flour
1/2 tsp. salt
1/4 tsp. ground mustard
1/8 tsp. pepper
1 c. milk
1 tsp. dried minced onion
2 1/2 c. cubed fully cooked ham
1 c. frozen peas, thawed
2 hard cooked eggs, chopped
Pastry for single crust pie (8")
Melt butter in a saucepan, stir in flour, salt, mustard & pepper until
smooth. Gradually add milk & onion, bring to a boil. Cook & stir for 2
mins. or until thickened. Stir in ham, peas & eggs. Pour into an
ungreased 8" sq. or 11x7x2" baking dish. On a floured surface, roll
pastry to fit top of dish, place over filling. Seal & flute edges, cut
slits in the top. Bake at 425 F. for 25 mins. or until crust is golden
brown & filling is bubbly.
