Original Tomato Soup Cake
Makes: 8 servings

1 cup sugar
1/2 cup shortning
1 tsp baking soda
1 can Tomato soup
2 cups flour
1/2 tsp salt
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp cloves
1/2 cup nuts (chopped)
1/2 cup raisins (optional)
1 pkg cream cheese
1-1/2 cups confectionary sugar

Low Down: Use a sugar substitute, such
as SPLENDA. for both regular
sugar _and_ confectioner*s sugar
(see below), also include the Lite or
No fat version of the cream cheese..

Cream sugar & shortning. In a separate
bowl add baking soda to tomato
soup. (it will fizz) Mix flour, salt, b.p.,
& spices. (Always start & end with
soup mix.) Add soup mix & spice mix
alternately to the first mix.
Fold in nuts & raisns (if desired -
optional) Bake in loaf pan for 1 hr
at 350 °F Remove and cool thoroughly.
~ FROSTING: Blend Cream cheese &
confectionary sugar. Spread on cooled
cake.
Prep Note: Confectioner*s sugar can be
made quite simply with SPLENDA
(or regular ole*sugar) and Ye Olde
blender....make it as fine as you
wish that way.
