4 Microwave Fish Recipes

  All recipes developed for 900 watt microwave.
   
  Crumb-Coated Baked Fish
  
1 c seasoned bread crumbs
1 tsp dried parsley
1 tsp lemon pepper
1/2 c plain yogurt
1 lb fresh or thawed frozen fish fillets
   
  In deep glass pie plate, combine bread crumbs, parsley & lemon pepper. 
Coat fish with yogurt; then coat with crumb mixture. Arrange fish in 8" sq 
glass baking dish with thick edges to outside. Cover with wax paper with 
vented corner. Cook at 100% power for 8-10 min or until fish flakes easily 
when tested with  fork.

FISH ROLL-UPS
  
1 (10-oz) pkg frozen chopped spinach
1 tsp instant minced onion
2 tsp lemon juice
1/4 c soft cream cheese
4 (1/2" thick) fresh fish fillets (about 3/4 Ib.)
1/2 tsp paprika
   
  Open spinach pkg. Place pkg on paper towel. Cook at 100% power for 8 min. 
Drain spinach; place in mixing bowl. Stir in onion & lemon juice. Spread cream 
cheese evenly on fish fillets. Divide spinach evenly; spread over cream cheese. 
Roll up fish; secure with wooden picks. Place fish in deep glass pie plate; 
sprinkle with paprika. Cover with vented plastic wrap. Cook at 100% power for 
6-8 min or until fish flakes easily when tested with fork. Remove wooden picks.

Fish Fillet Amandine
   
  1/4 c margarine or butter, divided
1/2 c slivered almonds
1 tsp almond liqueur, optional
1 lb fresh or thawed frozen fish fillets
1 tbsp lemon juice
   
  In 2-cup glass measure, heat 2 tbsp margarine at 100% power for 1 min 
or until melted. Add almonds. Cook, uncovered, at 100% power for 2 min 
or until almonds are lightly toasted; stir twice during cooking. Stir in 
liqueur 
if desired. In 8" sq glass baking dish, heat 2 tbsp margarine at 100% power 
for 1 min. Place fish in baking dish, turning to coat both sides in margarine. 
Sprinkle with lemon juice. Cover with vented plastic wrap. Cook at 100% 
power for 7-8 min or until fish flakes easily when tested with fork. Top with 
toasted almonds.

  Wine-Poached Fish
  
1 c dry white wine
1/4 tsp rosemary leaves, crushed
1/4 tsp salt
1/8 tsp white pepper
1 lb fresh or defrosted fish fillets
1/2 lemon, thinly sliced
   
  In  8" sq glass baking dish, combine wine, rosemary, salt & pepper. 
Add fish, thick edges to outside. Top with lemon slices. Cover with 
vented plastic wrap. Cook at 100% power for 5-7 min or until fish flakes 
easily when tested with  fork.
