RIO GRANDE RICE BOWL

8 oz ground beef round
1 cup chopped onion
1 tbs chili powder
1 tsp each ground cumin and garlic salt
1 cup raw white rice
15 1/2 oz can corn, rinsed
15 oz can tomato sauce
2 3/4 cups diced zucchini

Cook beef, onion, chili powder, cumin and garlic salt in a skillet 5 min. until 
browned. Stir in rice and 1 1/2 cups water. Bring to a boil, reduce heat, cover 
and simmer 12 min. until rice is almost tender. Stir in corn, tomato sauce and 
zucchini. Cover and simmer 8 min. more or until rice and zucchini are tender. 
SERVE WITH OVEN TOASTED FLOUR TORTILLAS. Makes 4 servings.
