  Sounds like a good idea! My mother-in-law used to sprinkle everything with 
flour prior to frying it, even broken up hamburger meat, or as she referred to 
it, scrambled hamburger meat. If you did this with flour, would the potatoes 
have a whitish color, or would it sort of thicken up the oil? Or, do you do 
this in a paper bag like breading chicken, or something, and then add it to the 
oil in the skillet?
