Easy Choucroute And Sausage
1 medium onion, sliced
2 carrots, peeled and sliced
1 Tbs. bacon drippings or olive oil
1 tsp. caraway seeds
1 lb. fully cooked link sausage, cut into 1-inch chunks
2 lbs. fresh sauerkraut, rinsed and drained

Place onion, carrots, bacon drippings and caraway seeds in a 3-quart
casserole. Cover with lid or vented plastic wrap; microwave on high 5
minutes. Add sausage; re-cover. Stirring midway through cooking,
microwave on high 7 minutes or until sausage is hot and vegetables are
tender. Stir in sauerkraut; re-cover. Microwave on high 6 to 8 minutes
or until steaming hot.
