VOODOO PIE

 

Yield: 1 9-inch pie; 8 servings

 

For the Crust:

  1/2 c. chopped pecans

  1/2 c. butter, melted

  1 c. unbleached all-purpose flour

 

For the Filling:

1st Layer:

  1 c. frozen whipped topping (Cool Whip), thawed according to

directions

  1 (8-oz.) pkg. cream cheese

  1 c. confectioners' sugar

 

2nd Layer:

  1 (5.9-oz.) pkg. instant chocolate pudding mix

  2/3 c. 2% or whole milk*

 

For the Topping:

  2c. frozen whipped topping (Cool Whip), thawed according to directions

 

For the Garnish:

  Choice:

    Sliced bananas

    Drained crushed pineapple

    Canned cherry pie filling, etc.

 

To prepare crust:

  In a small bowl, combine pecans, melted butter, and flour. Pat into

the bottom and up the sides of a 9-inch pie plate. Bake in a preheated

350ยบ F. oven until lightly browned. Remove from oven. Let cool.

 

To prepare filling:

  1st layer: In a mixing bowl, blend 1 cup whipped topping, cream

cheese, and confectioners' sugar until creamy. Spread into cooled crust.

 

  2nd layer: Whisk together pudding mix and milk. Spread evenly over

cream cheese layer, and then spread remaining whipped topping on top.

Place in refrigerator to chill for 2 hours before serving.

 

To garnish:

  Top with your choice of fruit toppings. Use a combo or a single fruit,

fresh, frozen or canned.

 

Note: You can use reduced-fat or fat-free whipped topping and cream

cheese, but the milk should be 2% fat or whole milk for the pie to set

up.

 

Variations: This pie lends itself especially well to 'adventurous

baking.'

 

Crust: Other nuts may be substituted for pecans. You could use a graham

cracker or gingersnap crust.

 

1st layer: Cinnamon and/or vanilla or almond extract could be blended

in.

 

2nd layer: Chocolate isn't the best combination with some fruits. Try

vanilla, butterscotch, pistachio, or lemon pudding mix with fruits that

complement them. Nuts (pecans, walnuts, hazelnuts, pistachios, or

cashews) may also be added to either the 1st or 2nd layer or blended

into the topping.
