Everyone has a favorite banana bread recipe, but how many of them are
fat-free and egg-free? This one is probably a little heavier than the
recipe you use now, but it tastes great.
Fat-Free Banana Bread 
6 ripe bananas (the riper the better)
1 cup (250 ml) sugar
2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp vanilla extract
1 cup raisins (optional)
Mash the bananas and sugar together. In a separate bowl mix the flour,
baking powder and baking soda. Add the banana mixture, the optional
raisins, and vanilla, stirring until thoroughly blended. Pour into
non-stick loaf pan and bake at 350F (180C) for 1 hour. Remove from pan
while still warm, and allow to cool before slicing. Makes 1 loaf. 
This little loaf makes a wonderful low-fat accompaniment to a breakfast
or brunch menu, and is great all by itself as a snack at any time of
day. Try it toasted with a little bit of honey or your favorite
preserves.
