Mexican Meatloaf

1 1/2 lbs. lean ground beef
1 10 oz. can tomatoes and green chilies
1 1/2 c. soft bread crumbs
1 egg
3 Tbsp. onion flakes
1 1/4 t. salt
3/4 c. grated cheddar cheese


Mix together beef, tomatoes and green chilies, bread crumbs, egg, onion flakes 
and salt.  Shape into loaf and place in shallow pan.  Bake at 375ยบ for 1 hour.  
Sprinkle cheese over top.  Return to oven until cheese melts.
