Low Fat Lemon Cheesecake
 
Yield: 10 servings
8 oz packages fat free cream cheese (NOT product in tub)
Vegetable Cooking Spray 
1/4 cup graham cracker crumbs 
14 oz can Eagle® Brand Fat Free Sweetened Condensed Milk (NOT evaporated milk) 
4 x eggs whites
1 egg
1/3 cup ReaLemon® Lemon Juice from Concentrate 
1 tsp vanilla extract 
1/4 cup sifted flour 
1 cup fresh assorted fruit 

Procedures
This Low Fat Lemon Cheesecake is so delicious when you make it with Eagle Brand 
Fat Free Sweetened Condensed Milk you can serve it to guests and family. 
Preheat oven to 300º. 
Spray bottom of 8-inch springform pan with cooking spray; sprinkle crumbs on 
bottom of pan. 
In mixer bowl, beat cheese until fluffy. 
Gradually beat in Eagle Brand Fat Free Sweetened Condensed Milk until smooth. 
Add egg whites, egg, ReaLemon and vanilla; mix well. 
Stir in flour. 
Pour into prepared pan. 
Bake 45 to 50 minutes or until center is set (center springs back when lightly 
touched). 
Cool. 
Chill. 
Serve with fruit (top cake with fruit or serve on side). 
Refrigerate leftovers.
