Okra Nuggets
2 lbs. fresh okra
2 eggs, beaten
1/2 cup buttermilk
1 cup all-purpose flour
1 cup yellow cornmeal
1 cup soft breadcrumbs
1 tsp. salt
vegetable oil

Wash okra; drain.  Remove tip and stem ends; cut okra crosswise into
1/2-inch
slices.  Set aside.  Combine eggs and buttermilk in a large bowl; stir well.
Add okra, and let soak for 10 minutes.  Combine flour, cornmeal, breadcrumbs
and salt in a medium bowl; stir well.  Drain okra.  Add okra, a few slices
at
a time, to flour mixture; coat well.  Fry okra in hot oil (375ยบ) until
golden brown.  Drain on paper towels.  Yield: 8 servings.
