Radish and Chive Canapes (Zakusky z Horodynoiu) 8 oz (225 g) farmer*s cheese or cream cheese 2 Tbs (30 ml) butter 1/2 cup (125 ml) finely chopped radishes 1/2 cup (125 ml) chopped chives or the green part of scallions (spring onions) Salt and freshly ground pepper to taste Thinly sliced rye or whole wheat bread Combine the cheese, butter, radishes, chives, salt, and pepper in a small bowl and mix until thoroughly combined. Refrigerate covered overnight or for up to 3 days. Spread on bread and make sandwiches and open-face sandwiches, trim the crusts, and cut into bite-size pieces. Serves 6 to 8 as an appetizer. Being close to the Baltic Sea, herring has been a staple of the Ukrainian diet since ancient times. Nowadays we*re lucky that pickled herring is available almost everywhere
