Pickled Cabbage

1 lb cabbage

1/2 c chopped onion

1/2 c shredded carrot

1/3 c white wine vinegar

1/2 tsp oregano leaves

Salt to taste

Using food processor or sharp knife, coarsely shred cabbage, you should have 
about 4 c. Place in bowl & add onion, carrot, wine vinegar & oregano. Mix well;

season to taste with salt. Cover & refrigerate at least 4 hr or until next day. 
Stir before serving.

about 5 cups
