Bread Pudding

Not a low fat recipe, but great for a winter treat.

 

1 8-10-oz) loaf stale French or Italian style bread, torn in pieces

2 1/2 c milk

4 oz butter

2 c sugar

1 can evaporated milk

2 tsp cinnamon

2 tbsp vanilla extract

1 c raisins

 

Heat oven to 350°F. Combine bread with milk; let stand 10 min. Beat butter with 
sugar in lg bowl until light & fluffy. Beat in evaporated milk, cinnamon

& vanilla. Stir in bread & raisins. Pour mixture into deep 3-4 qt baking dish. 
Place dish on baking sheet & bake 1 hr. Gently stir mixture with wooden

spoon. Continue to bake until all liquid is absorbed, about 1 hr longer. Serve 
while still warm with hard sauce or ice cream or heavy cream.

Hard Sauce

1/2 c unsalted butter, softened

1 c powdered sugar

3 tbsp dark rum

Beat butter with sugar in lg bowl until light & fluffy. Beat in rum. Cover & 
refrigerate. Remove from refrigerator at least 30 min before serving to allow

sauce to soften.
