Cheesey Eggplant 
Makes:  6 servings
1 sml eggplant
4 med. tomatoes, sliced
2 med. green peppers, chopped
2 med. onions, chopped 
3/4 lb sharp cheddar cheese, 1/8" slices 
Seasoning: (all to taste) salt, pepper, garlic salt, sugar 
=
Slice unpeeled eggplant about 1/4" thick 
Parboil *til partially tender.
Place layer of eggplant in lg casserole dish. 
Add layer of tomatoes. 
Fill spaces with a mix of peppers & onions.
Sprinkle lightly with each seasoning. 
Add layer of cheese Repeat layering, 
ending with cheese. 
Cover, bake at 400° F until steaming, 
(abt 1/2 hr). Remove cover, reduce heat 
to 350° F. Cook til tender & sauce is 
thick (about 1/2
hour)
