EASTER BREAKFAST CASSEROLE 1 lb. sausage 4 tbsp. chopped onions 4 tbsp. chopped bell pepper 6 eggs 1/2 c. sour cream Brown sausage, onions, and bell peppers in skillet; drain. Line baking dish with 3/4 of the sausage mixture. Combine eggs and sour cream; season to taste. Pour over sausage mixture. Bake at 350 degrees until eggs are semi-set. Stir egg mixture and top with remaining sausage. Bake until eggs are firm. Serves 4-6. EASTER BREAKFAST 6 to 8 slices bread 2 c. ham or sausage 1 c. grated cheese 6 eggs 3 c. milk Remove the crusts from the bread. Dip one side of bread in melted butter and place butter side down in 9 x 13 inch pan. Cover this with a layer of 2 cups ham or sausage and 1 cup grated cheese. Top with another layer of bread, butter side up this time. Blend 6 eggs and 3 cups milk and pour over the bread and let stand overnight. Bake at 350 degrees for 1 hour or until set. EASTER BRUNCH CASSEROLE 1/4 c. butter 1/4 c. flour 1 c. cream 1 c. milk 12-18 hard boiled eggs, Buttered bread crumbs 1/4 tsp., thyme 1/4 tsp., marjoram, 1/4 tsp. basil, Parsley, 1 lb. bacon, fried crisp and crumbled Make white sauce. Melt butter, add flour. Slowly add while stirring, milk and cream. Mix in seasonings. Salt and pepper to taste. Add cheese. Slice hard boiled eggs. Layer in buttered casserole with bacon. Pour cheese sauce over eggs and bacon. Add buttered bread crumbs to top. Bake at 350 degrees for 30 minutes. Serves 6-8.
