Nutty Popcorn Mix
Source: Taste of Home Christmas Cookies & Candies Recipe By: Zita Wilensky, North Miami Beach, FL 3 qt popped popcorn 1 c unsalted dry roasted peanuts 1 jar macadamia nuts, halved 1/2 c slivered almonds 1/4 c flaked coconut 3/4 c butter 1 c sugar 1/2 c packed brown sugar 1/4 c light corn syrup 1/4 c strong brewed coffee 1/8 tsp ground cinnamon 2 tsp vanilla extract In lg bowl, combine popcorn, nuts & coconut. In saucepan, combine butter sugars, corn syrup, coffee & cinnamon. Bring to boil over med heat; boil & stir 5 min. Remove from heat; stir in vanilla. Pour over popcorn mixture & stir until coated. Transfer to 2 greased 15"x10"x1" baking pans. Bake uncovered at 250°F 45-55 min or until golden brown, stirring every 15 min. Spread onto waxed paper; cool completely.
