Chow-Chow

Chop fine equal 
amounts of cabbage, green tomatoes,
mixed green and red peppers and cucumbers.
Use about half as many onions and ripe tomatoes
as other vegetables. 
To make one dozen quarts chow-chow, chop enough vegetables to make 3 
gallon Add 1/2 cup salt to mixture and put
mixture in a clean sack and hang up over night to drain.
Mix equal parts water and vinegar to cover mixture. Sweeten to taste, 
tie up 2 tablespoons mixed pickling spices in a cloth and drop in. 
Bring to a rolling boil. Pour in sterilized jars and seal. Store
in a dark place.
