Sock It To Me Cake
1 18.25-oz. pkg. plain yellow cake mix
2 tbsp light brown sugar
2 tsp ground cinnamon
1 c. finely chopped pecans
1 c. sour cream
1/3 c. vegetable oil
1/4 c. water
1/4 c. granulated sugar
4 large eggs
1 tsp vanilla extract
Glaze:
1 c. Confectioners' sugar, sifted
2 tbsp milk
Preheat oven to dg350. Grease and flour a 10-inch tube pan.
Filling: In small mixing bowl combine 2 tablespoons cake mix, brown
sugar, cinnamon and pecans.
In large bowl, with mixer combine remaining cake mix, sour cream,
oil, water, sugar, eggs and vanilla. Blend at low speed for one
minute. Increase speed to medium and beat two minutes more. Pour half
of batter evenly into prepared pan. Sprinkle filling evenly over
batter in pan. Spoon remaining batter evenly over filling, smoothing
it out with a rubber spatula.
Bake cake 50-55 minutes. Remove to wire rack to cool for 20 minutes.
Invert onto rack to cool completely 30 minutes more.
Glaze: In small mixing bowl combine Confectioners' sugar and milk
until smooth. Spoon glaze on top of cooled cake. Store at room
temperature up to one week.
