Enchiladas

 

SAUCE:

Get yourself some red chili pods.  Wash and clean.  About 12 or

so chilis.  Place them in a pot of water and boil.  Once they

have softened, remove them from water and place in blender.

Save the liquid.  In blender put about 1 to 1 1/2 TBLS. flour,

salt to taste, 1 tsp cumino and about 3 to 4 cloves Garlic.

Garlic is the secret to any chili!  Then add your liquid and

blend.  If your sauce is to thick add more liquid.

 

FILLING:

I also, after dipping my tortillas in hot oil dip them in my

enchilada sauce.  Sometimes  I will stuff them with shredded

beef and cheese or just cheese.  For a new taste try asadreo

cheese.  It's really good.  I will never however put hamburger

in my enchiladas!!  I did once and got plenty of raised eyebrows

from my family!  I told a friend of mine about the hamburger and

she just looked at me and said, "Ewwww, that is a mortal sin!"

Once you have plated your enchiladas spoon more sauce over the

top and sprinkle with more shredded cheese,  Garish with

shredded lettuce and diced tomato.  For something different try

using some sour cream on top of it all!!!
