PAULA DEEN PEACH CREAM TART

 

1                      Favorite pie crust - BAKED - 10" tart pan

6                      Peaches; peeled/sliced OR

2-16 oz.           Peaches in light syrup/drained sliced

4                      Eggs

¾ c.                 Sour cream

½ c.                 Sugar

¼ c.                 Flour

½ c.                 Peach preserves

1 T.                  Lemon juice

 

Arrange peach slices[if using fresh sprinkle lemon juice to

prevent discoloring] in overlapping circles over crust till

covered; overfill as peaches shrink during baking.  Combine

eggs, sour cream, sugar, flour till smooth pour over peaches;

bake @ 375° for 45-60 min. or till set; cool;  Combine

preserves/lemon and spread w/brush over warm tart.
