Chocolate Almond Coconut Bars
1 18.25 pkg. devil's food cake mix
1 c. butter, melted (2 sticks)
1 large egg
1/2 tsp almond extract
Topping:
2 large eggs
1-1/2 c. unsweetened coconut
1 c. semisweet chocolate chips
Preheat oven to dg350.
In large bowl with mixer at low speed combine cake mix, butter, egg
and almond extract for one minute. Spread mixture evenly over the
bottom of a 13- by 9-inch baking pan. Set aside.
Topping: Beat eggs with fork until lemon-colored and fold in coconut
until well distributed. Pour mixture over crust spreading evenly.
Sprinkle chocolate chips evenly on top.
Bake 25-30 minutes until coconut mixture has set. Remove to wire rack
to cool completely. Store at room temperature for up to four days.
Yield 24 bars.
