Butter Pecan Ice Box Cookies
2 c. brown sugar
1 c. shortening
1 t. vanilla
2 eggs
3 1/2 c. flour
2 t. baking powder
1/2 t. soda
1 t. salt
1 cup pecans, chopped 
Cream sugar, shortening, vanilla and eggs together until fluffy. Add dry
ingredients and pecans and mix well. Shape into 2 "logs", wrap in waxed
paper (or plastic wrap) and chill overnight. Slice into 1/8" OR 1/4"
slices and bake at 350 until edges just begin to brown.
