Fire & Ice Brunch Bake

Ingredients

INGREDIENTS

1 cup uncooked white rice, preferably converted

1 pkg. JENNIE-O TURKEY STORET Lean Bratwurst

3/4 cup thick and chunky salsa

1/2 cup light or regular sour cream

1-1/2 cups (6 oz.) shredded cheddar cheese

6 large eggs

Salt and pepper (optional)
Cook rice according to package directions. Meanwhile, heat oven to 350
degrees. Crumble sausage into a large skillet; discard casings. Cook over
medium
heat, breaking sausage into chunks, about 8 minutes or until sausage is no
longer pink. Stir sausage into cooked rice. Add salsa and sour cream; mix
well.
Stir in 1 cup cheese. Spread mixture evenly in a greased 13 x 9-inch baking
dish.

Using a 1/4 cup metal measuring cup, make 6 deep indentations in rice
mixture. Break one egg into each indentation; sprinkle with salt and pepper,
if desired.
Bake 15 minutes; sprinkle with remaining 1/2 cup cheese. Continue baking 8
to 10 minutes or until mixture is hot and eggs are just set in center. Serve
with additional salsa, if desired. Makes 6 servings.
