BOSTON CREAM PIE

 

CAKE---

2 1/2 cups flour

1 tbs baking powder

1/2 tsp salt

1/3 cup unsalted butter, room temp

1 1/4 cups sugar

1 cup milk

1 egg

1 tsp vanilla

FILLING---

1/2 cup sugar

1/3 cup flour

1/2 tsp salt

1 1/4 cups milk

3 egg yolks

1 tsp vanilla

CHOCOLATE GLAZE---

3 tbs butter

1 oz square unsweetened chocolate, chopped

1 cup sifted confectioners sugar

2 1/2 tbs boiling water

 

CAKE---Heat oven to 375 degrees.* Grease 2 round baking pans. Line bottoms with 
wax paper, grease paper. Mix flour, powder, salt in a bowl. Beat butter,

sugar, milk, egg, vanilla in 2nd bowl. Add flour mixture until smooth. Divide 
among pans. Bake 30 min. or until done. Cool in pans 10 min. Unmold cakes,

remove paper.

 

FILLING---Mix flour, sugar, salt in saucepan. Stir in milk. Cook over heat 
until thickened 15 min. Remove from heat. Beat yolks in bowl. Stir in 1/2 cup

hot milk mixture. Stir yolk mixture into milk mixture in pan, cook 1 min. 
Remove from heat. Stir in vanilla. Place plastic wrap directly on surface. Let

cool. Invert cake layer on platter. Spread filling over top of layer. Invert 
2nd layer on top.

 

GLAZE---Melt butter and chocolate in saucepan. Scrape into bowl. Add sugar, 
beat until mixed. Stir in water, beat until smooth. Let stand until good coating

consistency. Pour over top. SERVE WITH A HOT CUP OF COFFEE. Makes 10 servings.*
