Peanut Butter Muffins

 

2 cups flour

1/2 cup sugar

3 tsp. baking powder

1/2 tsp. salt

1/2 cup chunk-style peanut butter

2 Tbs. butter or margarine

1 cup milk

2 eggs, beaten

2 Tbs. butter or margarine, melted

1/2 cup sugar

2 tsp. ground cinnamon

 

In mixing bowl stir to combine thoroughly the flour, 1/2 cup sugar,

baking powder and salt. Cut in peanut butter and 2 tablespoons

butter or margarine till mixture resembles coarse crumbs. Add milk

and eggs all at once, stirring just till moistened. Fill greased

muffin pans 2/3 full. Bake at 400 for 15 to 17 minutes. Immediately

brush tops with 2 Tbs. melted butter or margarine. Combine 1/2 cup

sugar with cinnamon. Dip muffins in cinnamon-sugar mixture to coat

tops. Makes 15 to 18 muffins.
