Fried Peanuts
Peanut or vegetable oil for deep frying
2 cups (500 ml) shelled raw peanuts with skins
Fine salt to taste
Curry powder to taste (optional)
Cayenne pepper to taste (optional)
Heat at least 1 inch (3 cm) of oil in a deep saucepan over moderate 
heat until it reaches 300F (150C) on an instant read thermometer.
Add the peanuts and cook, stirring occasionally, until deep golden
brown, about 5 minutes. Remove the peanuts with a slotted spoon
and drain on paper towels. Sprinkle with seasonings of your choice 
while the peanuts are still hot. The oil may be strained and used
again. Makes 2 cups (500 ml).
These are great cooked in the oven or under the broiler, but if you
cook them over hot coals they can*t be beat. Use a small hibachi 
if you have one for added authenticity
