Old Fashioned Sugar Pie (Mississippi Style)
1 9 inch pie crust 1 cup granulated sugar 1 cup firmly packed brown sugar 4 tablespoons cornstarch 1/2 teaspoon ground cinnamon 1/4 teaspoon salt 1/4 teaspoon ground nutmeg 3 eggs 1 egg yolk 2 cups evaporated milk 3 tablespoons unsalted butter, softened 1 2/2 teaspoons vanilla extract Preheat the oven to 350 degrees In a large saucepan, combine the granulated and brown sugars, cornstarch, cinnamon,salt, and nutmeg. Mix well. Add the eggs and yolk one at a time, mixing well after each addition. Gradually stir in the milk until well blended. Cook over medium heat, stirring constantly, until the filling is thick and bubbly. Remove from the heat, Stir in the butter and vanilla extract. Pour the filling in the prepared pie crust. Bake for 40 to 45 minutes, or until a toothpick inserted in the middle comes out clean.
