Raw Apple Cake
2 cups sugar
1 1/2 cups cooking oil
3 eggs
3 cups all purpose flour
1 tsp. ground cinnamon
1 tsp salt
1 tsp soda
1 tsp vanilla
2 cups flaked coconut 
1 cup chopped dates
3 cups raw chopped apple
1 cup pecans
Cream together sugar and cooking oil. Add eggs and beat well. Combine
flour, cinnamon, salt and soda; gradually add to egg mixture. Add
vanilla, coconut, dates, apples and nuts. Batter will be very thick.
Pour batter into a greased and floured 10 inch tube pan. Bake at 325
degrees for 1 1/2 to 2 hours or until done. Yield: 1 10" cake. 
This was a really moist and delicious cake. I*m not a big fan of dates
or coconut but to be hones I didn*t realize they were in there when I
first ate it.
