CHOCOLATE CHIP SHORTBREAD STICKS . I love making these great cookies...they're relatively simple to make, pretty and delicious! . 1 cup unsalted butter, softened 1/2 cup confectioners' sugar 1 tsp. vanilla 2 cups flour 1 cup semisweet mini chips, divided 1-1/2 tsp. vegetable oil . 1. Beat butter, sugar and vanilla in large bowl with an electric mixer until blended. On low speed, beat in flour until blended. Stir in 1/2 cup mini chips. Cover and chill until firm. 2. Preheat oven to 350º. 3. Shape heaping tablespoonfuls of dough into 3-inch-long, 1/2-inch-thick logs. Place on lightly greased cookie sheets. 4. Bake at 350º for 8 minutes or until golden brown. Remove to wire racks to cool. 5. Melt 1/2 cup mini chips over double-boiler or in microwave safe bowl. Stir in vegetable oil. Dip 3/4-inch of one end of each cookie into chocolate.
