Tomato, Corn & Black Bean Salsa

 

Source: Revised Edition The New American Plate Meals(r) for a healthy weight & 
a healthy life

1 c seeded, finely chopped fresh tomatoes

1/2 c black beans, rinsed, drained

1/2 c frozen corn kernels, thawed

1/4 c finely minced red onion

1/4 c finely minced cilantro leaves

2 tsp extra virgin olive oil

1-2 tbsp freshly squeezed lemon juice

1-2 tsp hot pepper sauce or a few dashes of Tabasco(r), optional

Salt & freshly ground black pepper to taste

In med bowl, combine all ingredients. Serve chilled or at room temp.
