Orange & Chive Salsa

Serve this refreshing salsa with fish or poultry.

2 lg oranges, peeled, pith removed, cut in bite-sized pieces

1/4 c minced red onion

1/2 c diced green pepper

1/2 c diced jicama

2 tbsp minced fresh chives

1-2 tbsp freshly squeezed lime juice

Salt to taste

Pinch of cayenne pepper, optional

In med bowl, combine all ingredients.

4 servings

Per serving: 35 cal, 9g carb, 1g protein, 2g fiber, 2mg sod
