Pear Salad with Mint & Figs

Add a bit of elegance to your next dinner party with this easily prepared salad.

2 tbsp extra virgin olive oil

1/2 tbsp balsamic vinegar

1/2 tbsp freshly squeezed lemon juice

1/2 tsp honey

1/8 tsp salt

1 sm shallot, minced

1 sm head Boston lettuce, washed, torn

1/4 c chopped fresh mint

1 ripe Bosc pear, seeded, cored, quartered

8 dried figs, cut in 4 slices each

Freshly ground black pepper to taste

In sm bowl, whisk together oil, vinegar, lemon juice, honey & salt. Stir in 
shallot & set aside. To prepare salad, arrange lettuce on serving platter. 
Sprinkle

mint over lettuce. Cut each pear quarter into 4 slices & arrange over mint. 
Sprinkle with dried figs. Stir dressing & pour over salad. Toss to coat. Serve

garnished with freshly ground black pepper.
