Potato Soufflé with Green Onions

2 large baking potatoes
1/2 tsp salt
1/2 cup hot milk or cream
2 tbsp butter or margarine
4 slices bacon, cooked and crumbled
2 green onions, minced
2 eggs, separated
1 tsp salt
1/4 tsp pepper

Pare potatoes & cut into quarters.
place in medium saucepan. Barely cover with boiling water.
Add salt. Simmer, covered, until tender, about 20 minutes.
Drain. Shake dry over heat. Mash with a fork or potato masher.
Return to heat.
Beat in milk, butter, bacon, green onions, egg yolks,
salt & pepper. Beat until fluffy.
Keep warm over heat.

Beat egg whites until stiff. Fold into potato mixture.
Pile into a buttered 1 1/2 quart casserole.

Bake at 400 for 10 to 15 minutes until
puffy & golden. Serve immediately.
