Central Park Casino's Chocolate Soufflé with Marshmallow Sauce
1930

1/2 glass milk
3 tablespoons sugar
2 egg whites, beaten
2 squares of chocolate
2 egg yolks
2 tablespoons flour

Boil the milk, sugar and chocolate together. Add the flour, mixed
with a little cold milk.

Cook for 2 minutes, remove from the fire and add the butter, egg
yolks and the egg whites beaten stiff. Bake in oven for 15 minutes.
Serve with marshmallow sauce, recipe below.
