Queen Victoria Dream Bars

1/2 c. (1 stick) unsalted butter, softened
1 c. Confectioners' sugar
1 large egg
3 tbsp orange juice
1-1/2 c. flour
1/2 tsp baking powder
2 tsp grated orange rind
1/2 c. candied orange peel

        Preheat oven to dg350. Butter either an 11 by 7 inch pan or a 9 inch
square pan.

        In large bowl cream butter and sugar until light and fluffy. Beat in
egg until blended and gradually add orange juice (mixture will look
curdled).

        In separate bowl, sift together flour and baking powder and add
grated orange rind and candied orange peel. Stir to coat. Add flour
mixture to butter mixture and stir until blended.

        Spread batter into prepared pan. Bake 20-25 minutes. Cool on wire
rack and sprinkle with a layer of Confectioners sugar before cutting
into bars.

        Makes 18 bars.
