Rocky Road Fudge Bars
2 sticks butter
1 square unsweetened chocolate
1 c. sugar
1 c. flour
1 c. chopped pecans
1 tsp baking powder
1 tsp vanilla
2 eggs, mix well
Filling:
1/2 c. sugar
2 tbsp flour
2 oz. butter
1 tsp vanilla
1 egg
6 oz. cream cheese, softened
1/4 c. chopped pecans
6 oz. semisweet chocolate chips
2 c. miniature marshmellows
Topping:
2 oz. butter
1 square unsweetened chocolate
2 oz. cream cheese
2 oz. milk
1 tsp vanilla
1 lb. powdered sugar, sifted
Melt butter and chocolate square over low heat. Remove from heat, add
sugar, flour, baking powder, pecans, vanilla and eggs.
Pour into greased 9 x 13 pan.
Combine filling ingredients, sugar, flour, butter, vanilla and egg
and blend until smooth. Add cream cheese and blend until smooth.
Spread over chocolate bar. Sprinkle with semisweet chips and pecans.
Bake at dg350 30 minutes. Sprinkle marshmellows on top and bake 2 more
minutes.
Topping:
In pan over low heat melt butter, chocolate and cream cheese. Remove
from heat, add milk, vanilla and powdered sugar. Beat until smooth.
Pour over marshmellows and swirl.
