Potato-Pepperoni Supper

Nonstick cooking spray
4 Tbs. margarine or butter (1/2 stick)
5 large potatoes (2-1/2 lbs.), unpeeled and cut into 1/8" thick slices
1 small onion, diced
1/2 tsp. salt
1/8 tsp. pepper
8 oz. pkg. shredded mozzarella cheese
8 oz. can tomato sauce
3-1/2 oz. pkg. sliced pepperoni
2 large tomatoes, cut into wedges

Spray 12" skillet with cooking spray as label directs (or, use a
nonstick skillet).  Over medium heat, in skillet, melt margarine or
butter; remove skillet from heat.  Arrange potatoes and onion on
bottom and slightly up side of skillet; sprinkle with salt and
pepper.  Cover skillet; over medium-low heat, cook until potatoes are
tender, about 20 minutes.  Sprinkle potatoes with cheese; top with
1/2 of tomato sauce; arrange pepperoni and tomatoes over sauce; top
with remaining sauce.  Cover skillet; cook until cheese melts and
