Baked Apples

4 or 5 large baking apples
1 T lemon juice
1/3 cup dried craisins
1/2 cup chopped pecans
3/4 cup packed brown sugar
1/2 tsp ground cinnamon
1/4 cup (1/2 stick) butter, softened

Scoop out center of each apple and leave cavity about 1/2 inch from bottom. 
Peel top of apples down about 1 inch and brush lemon juice on peeled edges. 
In a bowl, combine craisins, pecans, brown sugar, cinnamon and butter. Spoon 
mixture into apple cavities. Pour 1/2 cup water in oblong slow cooker and 
place apples on bottom. Cover and cook on low for 1 to 3 hours. Serve warm 
or room temperature drizzled with caramel ice cream topping.
