ROASTED GARLIC BEAN DIP

 

1                      Head of garlic

1 T.                  Olive oil

14 oz.               Cannellini beans, drained/rinsed

3 T.                  Water

1 T.                  Lemon juice

1/2 t.                  Salt

1/4 t.                  Cayenne

2 t.                   Oregano

 

Peel outer skin of garlic bulb; cut off the tip of the head to

expose cloves; line baking sheet w/foil & pace garlic cut side

up in pan; drizzle w/oil; cover w/foil and bake @ 400° for 45

min; let cool.  Squeeze cloves of skin; place in processor along

w/beans, water, lemon, & remaining ingredients; blend till

smooth; serve w/pita wedges, baguette slices or crackers of

choice.
