Italian Beef and Potato Casserole
1 lb. ground beef
1 pkg. scalloped potato mix
1 c. tomatoes
1 16-oz. jar pizza sauce
1/2 c. water
1/2 tsp oregano
1/4 tsp basil
1/2 tsp garlic powder
1 c. mozzarella cheese, cubed
1/4 c. grated Parmesan cheese
Brown meat in electric skillet or Dutch Oven. Drain beef. Combine dry
sauce mix from scalloped potatoes with beef in pan. Add tomatoes,
pizza sauce, water, oregano and garlic powder. Stir in dry potato
slices. Cover and simmer on low setting about 30 minutes. Stir in
mozzarella cheese, top with Parmesan cheese. Cover and simmer 15
minutes more.
Serves four.
