CINDERELLA CAKE
FROM RACHEL'S KITCHEN 2 Cups Sugar 4 Eggs 1 Cup Salad Oil 2 Cups Flour 2 Teaspoons Soda 2 Teaspoons Cinnamon 1/2 Teaspoon Salt 2 Cups Canned Pumpkin COACHMAN'S ICING: 1 3-Oz Pkg Cream Cheese 1/2 Stick Margarine 1/2 of a (1 lb.) Box of Powdered Sugar 1 Teaspoon Vanilla Beat sugar and eggs until light and well blended. Add oil, continuing to beat. Combine dry ingredients and blend into egg mixture. Add pumpkin and mix well. Pour into a well-greased 9-inch tube pan. Bake at 350 degrees F. for 55 minutes or until cake is done. Let cake stand in pan for 10 minutes, then turn out on a rack to cool. Frost with Coachman's Icing: Combine cream cheese, margarine, powdered sugar and vanilla. Beat until very smooth.
